Kachumbari is Kenya’s favorite salad and is usually served alongside main meals or snacks. It can be compared to South America’s salsa due to its similarities.The recipe below serves 3
1 Red or Green Chilli (de-seeded, cut widthwise into fine round pieces)
1/4 cup Coriander Leaves (finely chopped)
2 small red Onions (in small cubes)
5 Tomatoes (in small cubes)
A cup of hot water with 1/2 tablespoon of salt
Juice of 1 lime
Place the onions in the hot water and swirl around for a minute to remove the strong onion flavour. Rinse out the water.Place the tomatoes, chilli, onions and chopped coriander into a large serving bowl.Add the lime juice toss the mixture. Kachumbari is ready. Serve immediately.
