Creating a hearty and traditional meal has never been easier with this slow cooker corned beef recipe. Perfect for a cozy dinner, this dish combines tender corned beef with flavorful cabbage, carrots, and potatoes. Follow these simple steps to enjoy a classic comfort food with minimal effort.

Ingredients

  • 3 to 4 pounds of corned beef brisket (with spice packet)

  • 1 large onion, quartered

  • 4 to 5 carrots, peeled and cut into large chunks

  • 1 pound of baby potatoes, halved

  • 1 small head of cabbage, cut into wedges

  • 4 cups of water

  • 2 tablespoons of apple cider vinegar

  • 2 tablespoons of brown sugar

  • 2 bay leaves

  • Salt and pepper, to taste

Instructions

  1. Prepare the Slow Cooker:

    • Place the quartered onion at the bottom of the slow cooker to create a base for the corned beef.

  2. Add Corned Beef:

    • Rinse the corned beef brisket under cold water to remove excess salt. Place it on top of the onions in the slow cooker.

  3. Season the Beef:

    • Sprinkle the spice packet that comes with the corned beef over the top. Add the bay leaves for extra flavor.

  4. Add Liquids and Sweetness:

    • Pour the water, apple cider vinegar, and brown sugar over the beef. This will help tenderize the meat and add a subtle sweet and tangy flavor.

  5. Cook the Beef:

    • Cover and cook on low for 7-8 hours, or until the beef is tender and easily pulled apart with a fork.

  6. Add Vegetables:

    • After the beef has cooked for about 6 hours, add the carrots and potatoes to the slow cooker. Place the cabbage wedges on top. This timing ensures the vegetables remain firm and flavorful.

  7. Continue Cooking:

    • Cover and cook for an additional 1-2 hours, or until the vegetables are tender.

  8. Season and Serve:

    • Taste and season with salt and pepper as needed. Remove the bay leaves before serving.

  9. Serving Suggestions:

    • Slice the corned beef against the grain for tender pieces. Serve with the cooked vegetables alongside. A dollop of mustard or horseradish can add an extra kick.
